Recovery Update & Mexican Quinoa YUM!

A week and a half post surgery and I feel totally myself. I’m thinking the 4 week recovery might turn into 2, easy!

Today is my first full day with Marshall by myself and although my weight restriction is 10-15 lbs, I’m getting by just fine with my 23 lb kid. I don’t feel like I’m doing anything I shouldn’t when I lift him, so I’m going with it.

After the first surgery, it was obvious to me that I shouldn’t be lifting him or anything and I was just so tired and whoa. This surgery is a whole different ball game. Just a boob job ok? Really.

I did not however have the motivation to get him ready and go to the gym this AM. I originally thought we might (I was planning to walk and ride the bike) but it didn’t happen. So we spent the morning running around the house playing with pots and pans while stopping to watch Curious George every so often. After his nap- we went out to run some errands. My mother in law would be shaking her head. But I do not know how to not leave the house.

We checked out Foundry Provisions FINALLY! I’ve been wanting to try this coffee shop since they opened a while back. I got a Almond Chi Tea Latte and Marshall got a donut from Long’s bakery. YUM. I felt imagined looks coming from the hipsters who were probably annoyed wondering if I was going to hang out with my kid (who actually was pretty quiet!) I almost stood up and said don’t worry we are only staying 10 minutes, but we just minded our business and went on our merry way.


Anyway- I want to say thanks to all for the support throughout this time. I’ve been told 1,000 times how brave I am for taking this on and going through with the prophylactic mastectomy, but in all honesty I just feel like I made the decision that was right for me. What took the most courage was following through with getting my blood test to see if I even had the stupid gene mutation. Once that was done all of the steps to follow were simply decisions based on knowledge I had. You just do what you have to do and accept it.

Now to some delicious stuff- we took a mexican quinoa dish to the super bowl party we went to last night and after I put it up on Instagram, had several requests for the recipe.

It’s really as simple as:

Step 1: 

  • Rinse Quinoa

  • Cook 1 cup – it’s 1 cup of Quinoa to 2 cups of water. I used a cup of water and a cup of broth to enhance flavor.

Step 2: 

  • Sautee veggies 
    • onion
    • green pepper
    • mushroom
    • tomato (add those in last, we used mixed medley cherry tomato’s)  
    • If we had jalopeno, I would have definitely added it
Step 3: 
  • Mix everything together in casserole dish
    • add 1/2 jar of corn and chili salsa (we bought this at Trader Joes)
    • half can of corn
    • can of black beans
    • sprinkle hot pepper cheese on top
Step 4: 
  • Bake at 375 for 20 minutes or until cheese looks melty
  • Add avocado on top. And make it look kind pretty. 
That’s it! It’s basically just throw in whatever you like and make it a party in that dish. Also- we made some fantastic guacamole to go with it. Super simple:
  • Avocado, tomato, red onion, a squeeze or three of lime, cummin, cayenne pepper, garlic powder- whatever spices you like. I’m a big fan of guac that has a bit of a stronger lime flavor.
